Fetta and Ricotta Mint Dip
(This is a great dish to take to a friend’s place.)
200g (7oz) soft fetta cheese
½ cup of ricotta cheese
3 cloves garlic (crushed)
1 cup of mint leaves (finely chopped)
1/3 cup of olive oil (reserve some oil to drizzle over dip when serving)
- Crush fetta into small crumbs with your fingers
- Add ricotta, garlic, mint, oil and pepper, and combine
- Top with a drizzle of oil
Serve with small slices of sourdough bread.
Use the softer variety of fetta, not Greek or Danish.
